Speaking about terroir, it’s undoubtedly a story of passion and authenticity. Producing a single vineyard cuvée ensures the expression of a unique plot while the Champagne Appellation promotes the blending of several crus. In this way, I wish to highlight the influence of a unique terroir on a very singular fruit: the grape. Francis TRIBAUTPerched on the hills of our village Aÿ-Champagne, our single vineyard LES SOUS, feeds on steep hillsides where we can contemplate its chalky soils. The high altitude at the edge of the woods, combined with the coolness of the nights insures a slow but certain maturity. Established on 1.85 Ha, it is planted exclusively with the main and typical varietal of the Montagne de Reims: Pinot Noir. This cuvée is the willingness to associate a real freshness to the richness of the Pinot Noir from Aÿ’s terroir. A sustainable viticulture and the work of the soil done accordingly to ancestral technics are essential to produce a single vineyard cuvee as singular as LES SOUS. This plot offers fresh and elegant wines, without any excess of vinosity.
